肥嫩光鸭２０００克
精盐、醋各２５克，葱结１５克，姜２０克，八角、五香粉各２克，花椒１克 制 法： 将光鸭斩去小翅和脚爪，在右翅窝下开一小口，取出内脏、气管、食管，放入清水中浸泡，去除血污，洗净沥干水，用精盐、花椒、五香粉少许拌和腌制１小时，再放入精盐水中浸１至２小时取出洗净； 炒锅加水，放入鸭子和醋、葱结、姜块、八角，置旺火上烧开，加盖焖烧２０分钟后，将鸭翻一个身，再焖烧２０分钟左右，至鸭肉硬酥时取出，冷却即成，食用时，切块装盘。 |
