素火腿
用料：豆腐衣500克，素油100克，白糖100克，盐10克，味精2克，红米汁少许，葱、姜适量。
制法：豆腐衣放水中浸一下使之回软，用抹布擦干水分。锅中加汤及盐、糖、味精、红米汁熬浓，放入豆腐衣，使豆腐衣吸收卤汁至汤将尽，浇上熬热的葱、姜油（油烧热，放下葱、姜炸出香味）拌匀。取一长条状布袋，把豆腐衣塞入布袋，塞得越紧越好，用绳系住袋口，另取麻绳，在布袋外边密密紧紧地匝上一层，扎紧、打结。素火腿置盘中，上笼用旺火蒸1小时，冷却后解开绳子，一剖二爿，再切成半月形片装盘。 特点：色暗红，咬来紧实，香味浓，咸中带甜。 关键：用盐不能太重，佐茶的菜不可太咸。豆腐衣调味后装袋塞得越紧，外表绳子扎得越紧，素火腿的质感，外形就愈像真火腿。 |
