高丽香蕉

用料：香蕉3根，豆沙50克，鸡蛋清3只，淀粉少许。

制法：1、香蕉去皮，竖着对剖，修掉内芯，呈一凹槽，用刀将香蕉略压一下使之略为平整，在剖面上撒些干淀粉。豆沙搓成细条，嵌在凹槽中，将填好豆沙的两爿香蕉仍合为一个香蕉，改刀成2厘米的段。2、鸡蛋清放在汤盘里，用方头木筷的方头一端抽打蛋清，至很浓的泡沫堆沏一起。筷子竖插入不倒为止，在发蛋中拌入25克干淀粉。3、锅上火，加清油400克，烧至三成热里，将香蕉段蘸上干淀粉，放入蛋泡糊中，用筷夹着，裹满蛋糊后入油锅汆至表层凝结，内部软热即成。

特点：洁白圆润，柔软香甜。

关键：香蕉应挑选成熟的，切忌用未成熟的。蛋泡糊打发后应马上使用，以防坍塌。炸时油温忌高，应始终不超过三~四成热为宜。炸成后上菜要快，慢了高丽香蕉可能缩瘪。
