the house is about 6.5 years old, the leaking place is centre.

No, there is no need to replace the roof. You may try to clear some of the ice and snow let the water go through. It is a garage there is no insulation under the roof. The wood will dry up quickly.
If you are sure it is the ice dam problem on the garage roof and it only happens occasionally in the winter. I don’t think your should worry about it. When the time to replace the roof you may add a layer of waterproof material under the shingle.

Our garage has drywall on the ceiling. Will the water damage that?

Yes. drywall is not water resistant.

I had a similar problem last year when the temperature was fluctuating up and down. The leaked water damaged some of the dry wall in my finished garage (my house is about 5 yrs old).

It is very hard to fix the problem while there is ice on top of the roof. You may further damage the shingles on the roof if you try to work on the problem now.

After the snow was completely melted in the spring, I sealed the potential leak area, between the shingles, or between the shingles and the metal rain collection valley, with Silicone adhesives and silicone sealants (I used a total of 6 tubes, at around $5 each tube, from Rona). I have no problem since then.

Unfortunately I had to redo some of the plastering/taping on the damaged dry wall.

So that means i don't need to replace the damaged drywall, just redo the plastering/taping of it.

You should first check why the roof leak. If the roof is clean of ice and it does not leak under rain then you are sure it is an ICE DAM problem. If it is leak all the time then roof is damaged you should find someone to fix it.
Dry wall is for indoor use only. It is made of (石膏) which lost its strength when it is wet. It can take some water when it is painted. We still use them in the bath room right. If it is not broken or out of shape you only need to repaint it after it dries.

Are Silicone adhesives and silicone sealants same or different? Do you need to use both and how? Thanks

There are just too many kinds of sealant and adhesive for evey special needs. Silicone or no-silicone. You better tell the store people what you are using it for. They should be able to help. They uasually are applyed by caulking gun like this.
