Easy, first you need to buy some casings from deli shop. Then get a big piece of pork shoulder, it has a nice mixture of fat and meat. Chop the pork shoulder to desired size, season it according to your taste (wenxuecity.com has some good recipes), then stuff the pork chops to the casing. It's a little tricky, we used a cut-up 2L coke bottle as the funnel, add some vegetable oil to the pork chops to ease the stuffing.
