Wait when they are slightly wilt, then water the day before.
You could just lift the pot up and check its weight, the pot is very light when it's dry.
When you water plants, do not sip, water really well, if possible, merge the whole pot into water for 10 minutes, then drain well.

10 days is far too long, especially during winter.. normally you have to water when it pot is bone dry, it ranges few days to a week max depenign on your house humidity.
Phalaenopsis is the easier one to grow. Is the root in good condition? If not, you may have to keep the unit in a humid environment but don't ever water it every other day. The watering has to be in cycles of bone dry, water until dripping and then bone dry again.... By the way, what is the planting material? IT should be tree bark, charcoal, coco shell...etc which provides excellent ventilation. If it's normal potting compost, which is totally no good and may cause the root to rot.
I have quit orchid few years after my green house being attacked with virus. At that time, I have over 50 pots of all different kind of orchids. It's a fun hobby and I find it's getting much less expensive this days. As of now, I still have a few plants, Phalaenopsis and a many years old (more three years now) Oncidium papilio. Looks like real butterflies. Here's a link to it. I have 5 flower stems for years and flower is still comming up non-stopped one after another one.
I still have a lot of potting material, specially imported clear orchid plastic pots which you can see the root conditions easily. QQS me if anyone wants it. I'll like a $0.5 each for the clear pots for a minimum 10pcs at a time.
