I went to landsdown park farmers market today, I spoke to two vendors. The honey they are selling are honey from fall of 2010.
For the theory to work, then, what you need is honey from birch flowers, which blooms in May. I been told they are not harvesting now, due to the rain and very few flowers, the honey bees collected now are for the bees.
If someone can get this year's local honey! that would be awsome.
