Make about 20 macarons /40 macaron shells 4cm diameter
75g almond meal
75g powdered sugar
4g matcha powder
70g egg whites
60g sugar
pinch of cream of tar tar
1. sift almond powder, powdered sugar and matcha powder together
2. beat egg whites and cream of tar tar together on low until bubbles
3. add sugar into egg whites and beat on high until stiff peaks form (~8 mins)
4. fold in powder ingredients into egg whites (fold until glossy and the mixture forms a ribbon like consistency, it is very easy to over mix and under mix the mixture, test as you fold)
5. pipe out mixture onto a baking sheet and let dry until a skin forms on top
6. bake at 140C for 12 to 13 mins
7. let completely dry before filling

1/4 cup of unsalted butter
powder sugar added to taste
matcha powder added to taste
