如果是主语，就是主语从句。

Doesn't mean to discourage you. Just Google "person that" and you will get some examples.

In blogging writing, grammar sometimes is loose. The more serious error in that original sentence is the comma. It should be "... the Chinese, who ...." instead of ".... the Chinese who ...".

The subtle difference is that this refers to that particular person rather than a generic person.

I think 'that' and 'who' can both be treated as 'subjective'. So, it could be "... person that writes the letter ..." and "... person who writes the letter...". In usage, there is no difference. Is that right ?

When you need a comma after "person", you have to use "who". Is that right ?

You need a ',' before 'which' to be specific.

Just Google "a person that" and "a person who". These two are interchangeable, I believe. However, when it is restrictive, must use 'who'.
