You can download an evaluation version of the MS Server 2003 and 2000 AS on their web site.

It is quite hard to install and config MS project 2002 in a client-server environment.
You also need to install SQL server and Exchange server before MS project server can be installed.
If you just want to try the basic functions, MS project 2000 is complex enough and it already includes the server side support called "Project Central'.
FYI, You need at least 3-4 weeks to set them up if you don't have any experience with w2k networking before.
