求教猪肝的做法

本人酷爱吃猪肝，但每回做出来都是硬邦邦的。记得在国内时，饭店里做出来的好象不是这样的。哪位做猪肝的高手请教教咱。多谢！

是不是要先要用生粉勾一下?

切薄，用生粉，盐，料酒等勾一下，几分钟就可以。急火，等锅烧热后，放油，多放些，不要等油很烫，放入猪肝，快速翻炒，再加葱等辅料，翻几下，就可以起锅。
重点：勾，大火，热锅，多油，快速起锅。

就能做出和馆子里差不多的来了

Is it safe to eat pork liver here? I didn't eat it for quite a long time even I quite like it as I heard that as the pigs are all raised in pig farm here and maybe the liver has some bad stuff accumulated. Not try to scare anyone but would like to hear any opinion on this.

I don't know if the pig in China is safer. But pig in China used to feed naturally (maybe not right now). The pigs here are all fed in the factory. Well, I feel that maybe the best way is not to eat liver too often.
