This you have to explain.
Many employer didn't know there is a things called TN for Canadian citizen. When they say they don't sponsor, it's just that they do not want to go through the paper work and costs of filing for H1B.
Go ahead applying for the job, when they ask, tell them Canadian TN does not need sponsorship, all you need is an offer letter, and you can get the work permit in one day, all by yourself.

Two different law firms had prepared all related documents for my husband. Both times they had included a letter of experience. It is essentially a resume put into complete sentences.

Law firms charge the company big money for their "work", of course they will try to show they are worth the money.
Letter of experience is not required if you have a matching degree, period.
Another more relevant issue to most readers here: if your degree is from CHina, you may have to get an official translation before you head to the border.
