As far as I know, if you apply for PR for US, the location of birth is the #1 factor for the application. The priority for those who were born in Mainland China are among the lowest which is not good at all.
I am not sure if one will be rejected for entering US or China with a passport that does not show LOB on it.

It's really hard to say, but nowadays, the war agains terrorism is the top priority. People from mainland china are not on their closely watched list. They can figure out where you were born even if it's not on your passport, unless you use a Japanese name.
