本来就喜欢杏仁的香味,吃了这个饼干以后,对它更是喜爱有加!
Almond biscotti (3 dozen)
3 eggs
½ cup oil
1 cup granulated sugar
2 tsp almond extract
½ cup finely chopped almonds
2 ½ cups AP flour
2 tsp baking powder
• Preheat 350F, grease and four cookie sheet
• In a large bowl, beat eggs with oil; add sugar and almond extract. Continue beating about 5 mins until mixture is thick and pale. Fold in chopped almonds.
• Sift flour with baking powder. Stir into egg mixture using wooden spoon
• Shape dough into 2 logs about 7.5*25 cm each, and arrange on cookie sheet. Using a wet spatula, flatten top and smooth sides of logs
• Bake 25-30 mins until golden. Remove from oven and lower temperature to 300F
• Let logs cool on cookie sheet about 10 min. cut into 1 cm slices using serrated knife. Lay slices flat on cookie sheet and bake 20 mins linger, until surface is golden and crisp.
• When done, transfer to racks and coll.

应该在cookie还热、还软的时候切。
 
的确好吃.
可能我第一顺序烤的时间长了些,切的时候觉得硬了些,决定再做一次,希望这
次成功.
