INGREDIENTS:
1 California King Salmon, cleaned, scaled with or without head and tail, about 4-9 lbs.
Rub
1 tbsp paprika
2 teaspoons garlic powder
2 teaspoons ground white pepper
2 teaspoons ground cumin
2 teaspoons dreid leaf oregano, crushed
1 1/2 teaspoons salt
3/4 teaspoon granulated sugar
1/8 teaspoon cayenne pepper
Lemon slices to garnish
COOKING INSTRUCTIONS:
1. In a small bowl, combine aromatic rub ingredients.
2. Make 5 deep cuts in salmon on each side of fish.
3. Rub aromatic seasoning into the cuts, and center of the salmon.
4. Grill on oiled grill over medium hot coals or gas barbecue. Cover and cook for 10 minutes per inch ot thickest part of salmon.
5. Check salmon for doneness by piercing meat at center bone. Salmon is done when meat flakes easily and is even in color.
6. Remove from grill, cover and let stand for 10 minutes.
Suggestion:
For a lighter meal, flake salmon onto tossed salad, and add a light dressing.
