我只会做一种最普通的,吃腻了;
也许高手们不屑这种简单小点,有满意自己手艺的还是分享一下吧,先谢了。

Blueberry Muffins

1 cup (240 ml) whole milk

2 large eggs, lightly beaten

1 teaspoon pure vanilla extract

3 cups (420 grams) all-purpose flour

1 cup (200 grams) granulated white sugar

1 tablespoon (12 grams) baking powder

1/2 teaspoon salt

1/2 cup (113 grams) unsalted butter, chilled and cut into small pieces

2 cups (260 grams) fresh or frozen blueberries

1/2 tablespoon grated lemon zest

2 tablespoons (28 grams) unsalted butter, melted
 
Banana Muffins


1 3/4 cups (245 grams) all-purpose flour

1/2 cup (100 grams) granulated white sugar

1/4 cup (50 grams) light brown sugar

1 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 ounces (65 grams) white chocolate, cut into small pieces

2 large eggs, lightly beaten

8 tablespoons (113 grams) (1 stick) unsalted butter, melted and cooled

3 very ripe large bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)

1 teaspoon pure vanilla extract

Garnish:

1 large banana, sliced (optional)
 
Strawberry-Banana Muffins

2 large ripe bananas, peeled and pureed

1/2 cup (1 stick) (113 grams) unsalted butter, melted

1 cup (215 grams) light brown sugar

2 large eggs, lightly beaten

1 teaspoon (4 grams) pure vanilla extract

1 cup (240 ml) fresh or frozen blueberries or strawberries (cut into small pieces)

2 1/4 cups (315 grams) all-purpose flour

1 1/4 teaspoons baking powder

1/4 teaspoon baking soda

1 teaspoon (4 grams) ground cinnamon

1/2 teaspoon (2.5 grams) salt
 
介绍2种Muffin的做法,简单易做。
香蕉核桃仁Muffin
配方:all purpose flour250克、盐少许、bakingpowder2tsp、糖
70克、蜂蜜3Tbsp、鸡蛋(大号)2个、牛奶180毫升、黄油100克、香蕉
2根、核桃仁70克
做法:
1.核桃仁烤几分钟后切碎。把黄油溶化备用。
2.将面粉、盐、bakingpowder和糖一起混合后,过筛网筛到盆里。
3.盆里的面粉中间弄一小坑,将蜂蜜、鸡蛋、牛奶加入,用打蛋器由里向外搅拌混合。混合均匀后,加入溶化的黄油再混匀。
4.把香蕉切成1厘米的小块,核桃仁留出装饰用的后,其余的与香蕉一起放进3中,用橡胶刮刀混合。
5.将4倒入muffin器中,顶部摆上核桃仁,预热好的170度烤箱烤25分左右。
Muffin凉了之后,放进塑料袋里存放以免干燥。

Cheese Muffin
配方:低筋面粉100克、bakingpowder1tsp、鸡蛋1个、黄油(无盐
) 50克、糖60克、牛奶60毫升、cream cheese100克

做法:
1.黄油自然恢复到室温温度。鸡蛋若在冰箱保存的话,应提早拿出来自然恢复到室温。面粉和bakingpowder一起过筛备用。
2.cream cheese用微波炉加热1分钟左右,使之变软放入盆中。用打蛋器将其打匀后,加入恢复到室温的黄油,充分混合到奶油状。再加入糖混合到糖的粒感没有为止。
3.放入鸡蛋打匀后,再加入牛奶充分混合均匀。
4.将筛过的面粉和bakingpowder倒入3中,从中心开始向外延盆壁搅拌。不
要搅拌过度,面粉的粉状没有了即可。
5.将4倒入铺好纸杯的muffin器里。不用倒的太满,8程满即可。预热好的170度烤箱烤25分钟左右。
