#1 is a good photo. there are a few things you can to do improve this photo. a) place the root at 1/3 to the right, coz your light is from left behind you. b) in PS, make the dark part of the root even darker. this boosts its contrast. gives more feel of its age and strength. c) boost the green a little bit, just a little. this will give a color contrast to the old root. lead viewer's eyes to emphasize onto the main object - the root. d) use burn tool to bring down the background at left top corner a little. e)Sharpen it.
Next time, when you take this type of photos, try to use a bigger aperture, such as F4~F5, this will blur out otherwise distracting background.
All rest, well, since you are new to this, it is ok.

I used your original photo and retouched it a bit just like I suggested. compare to your original, what do you see missing in your original? (contrast and details of the main object - root)
My understanding of your photo is you were attempting to use color contrast of green grass(young) and aged root (old) to give an impression. Also, the root has so much details, it is natually the center of this photo. And I think we should give it a complete show even if we have to trade off some from the surrounding grass. my edit is not a great one, but should be good enough to show you the idea I was suggesting.
I think this type of photos are not suitable for B&W. After conversion, it is difficult to isolate main object out from background. unless you were talking about partially desaturate?
