I just did it following the instruction as from both YY LingDao's instruction and the book below:
* On the fifth day you can move your beer into the secondary fermentor.
* siphon beer into secondary fermentor(carboy) being careful not to disturb the sediment in the primary.
* Using cold water, top up to the neck of the carboy(leaving an air gap in the narrow part of the neck).
* Set carboy in a warm location and attach the bung & air lock ( air lock should be filled to the mark with water). Let the fermentation process completely (no more gas produced)
we have to wait after 21 days to bottle.
in the book, it says "although you can drink some beers as soon as 5-10 days after botting I do not start drinking my beers for at least two months after bottle"
