Peggy's 菠萝曲奇
Pineapple rum cookies(2 1/2dozen)
2 cups AP flour
1 1/2 baking powder
¼ tsp salt
¼ tsp baking soda
2/3 cup shortening
1 cup brown sugar
¼ cup granulated sugar(可略)
2 eggs
1 cup chopped pineapple, well drained
1 tsp rum extract(optional)
• Preheat oven to 400F
• Sift flour, baking powder and soda
• In large bowl, cream shortening. Add brown and granulated sugars; beat until smooth. Add eggs, one at a tine, pineapple and rum extract, beating well after each addition. Mix in sifted dry ingredients, blending thoroughly.
• Drop very small spoonfuls of batter onto ungreased cookie sheet. Bake about 10 mins. When done, carefully transfer cookies to wire rack and let cool.
