Use US$ to exchange RMB since if you use CAN$, the bank will use it to "buy" USD first and then "buy" RMB. You will lose some more since there are two transctions.

The best way is to use your credit as much as you can in China. Big department stores and hotels mostly likely accept credit card. Just be careful that your credit card company does not charge currency exchange fees.
You can make small changes of RMB at the airport or hotels you stay. The best way is to get cash RMB from your parents of relatives and you can give them cash dollars or a check which they can deposite in Bank of China.
