SAMALL MEAT AND VEGETABLE PIES
Makes about 25 pies
Preparation & cooking time: 2 hours
FILLING
1/2 pound chopped well-done beef or
1 chopped cooked skinless, boneless chicken
1/4 chopped cabbage
1/2 stalk chopped celery
5 leaves chopped chinese cabbage
2 boundles (100g)bean threads(from chinatown)
10 stalks chopped green onions
1 piece chopped ginger
2 tablespoon vegetable oil
1 tablespoon soya sauce
CRUST
5 cups all-purpose flour(white)
2½ cups 60-70 C water
OTHER
vegetable oil

1. Submerge bean threads in hot water until they are soft and chop to pieces (short strands).
2. Mix the chopped meat and vegetables in a large bowl.
3. Mix flour using 60-70 C water in bread machine for 7-8 minutes.
4. Gather the dough into a ball.
5. Using a floured rolling pin, roll dough on a lightly floured surface from the center out in each direction, forming a 2-mm thick disk.
6. Wrap the disk tightly and completely around 2 tablespoons of filling. OPTIONAL: make patterns around the edges
7. Place the pies on a big pan (can hold about 9 pies).
8. Add 1 tablespoon of vegetable oil and 2 tablespoons of water to the pan.
9. Turn to high power. Cover the lid of the pan and stew until the bottom surface turns brown (usually takes about 5 minutes). Flip the pies and stew for another 2 minutes. Flip again and stew for another 1 minute. Flip again and stew until both surfaces are brown but not burnt.
