糯米泡一晚,用笼布隔水蒸个把小时(尝尝熟了就行),放入干净容器加点凉开水拌拌,(水不要太多,要不然米酒不甜)待米凉到温热(米太热酒曲不会发酵)将酒曲均匀拌进去,边拌边搅,一定要搅匀。然后压实点,中间用筷子掏个洞,用棉被包起来放个四五天,米离缸就好了。

I use rice cooker to cook the sweat rice as you cook ordinary rice to meal. but use a little less water.
once it is cooked, you need to use cold/tap water to rinse out the starch (this is very important, otherwise the wine will be sour), grind the yeast you bought at chinese store. one for two to three cups of sweat rice. put the washed rice in a corning ware and spread the grind yeast on the rice every time you add the rice into the corningware. once you finish the rice, spread some more yeast on the top of the rice. use a plastic sheet cover/seal the corningware (sealing is important as not enough oxygen is very important to make wine. too much oxygen will csue it becoming vinegar. keep the corningware in a snow jack. it will be ready in three days. I put it on top of the fridge as the fridge's heat will help too.

Thanks for the tip. My 4th try had wine come out, but it was sour and not sweet. I used one ball per cup of rice, guess the ratio is not right... I'll try it again.
