香菇鸡肉大馄钝,是熊孩子最爱的早餐之一。
最早让我接触这个大馄饨的,就是熊孩子。他们辅导班附近,有家吉祥馄饨馆,同学们周末的晚餐,经常在那解决。那天他打包回来给我尝,让我也做给他。的确是香,但我尝出,绝不是单纯只有鸡肉和香菇,咬开后,清晰可见肥肉的碎粒。因为之前我在家也按照熊孩子的描述给他仿制过,但他说虽好吃,但口感不同。
这次,我也将肉馅中添加了少许的猪五花,用香料水来取代料酒,进一步改善肉馅的发柴口感,用干香菇来取代鲜香菇,使馅料更有一种特殊的香气。

所需材料:
鸡脯肉400克 猪五花60克 香料水 葱 紫菜 馄饨皮300克
具体做法:

1准备食材。
2鸡脯肉和猪肉都切成小丁,放入多功能料理器中
3绞成细细的肉馅。(葱也可一同加入)
4干香菇泡发后洗净去蒂
5切成大块放在料理器中
6绞成细末。

7将一把花椒 两三片香叶,一个八角,一丁点桂皮,三四片姜用温水泡出香味后放凉备用
8一勺勺的加入绞好的肉馅中,每加一次就充分搅匀,我大约加了6大勺。
9在肉馅中加入香菇末,一匙芝麻油,一大匙花生油,二大匙酱油,适量盐拌匀
10开始包馄饨
11包成自已喜欢的形状,我喜欢直接对折,再对折
12在锅中加入适量水和清洗过的紫菜,烧开煮熟馄饨,关火后加香葱末出锅
