Wine terminology from A to Z

A
ACIDITY A natural component in grapes that gives white wine a refreshing quality.

AFTERTASTE The lingering flavor in your mouth after you have swallowed the wine.

AGING Intentionally keeping a wine for a length of time so that the flavors harmonize and the wine starts to soften and open up. *There is no one correct amount of time to age wine. All wines age differently and at different rates.

AROMA The smell of a young wine. Aroma is slightly different from bouquet.

ASTRINGENCY The quality of wine that makes your mouth slightly pucker.

B
BALANCE The sense you get from a wine when all the components have good equilibrium.

BITTER A harsh quality that wine can take on. This happens when grapes are not quite ripe.

BLEND When different lots of wine are combined to make a final wine with specific characteristics. A blended wine may be of different types of grapes, a blend of the same grape variety from different vineyards, or the same grape that was handled differently in the vineyard or during wine making.

BODY The weight of the wine in the mouth. Wines can be light, medium or full bodied.

BOUQUET The aroma a wine takes on after it has aged in the bottle.
BUTTERY A description of a wine (usually white wine) that has taken on a mild buttery flavor.

C
CABERNET FRANC The lighter relative of cabernet sauvignon. It is not unusual for this wine to be blended with cabernet sauvignon and merlot. A violet aroma and slightly spicy flavor are noticed with this wine.

CABERNET SAUVIGNON This is one of the famous grapes of Bordeaux althougth it can be found in California, Italy, Australia and Chile. It has been dubbed the "king" of red grapes and possesses impressive structue with deep, rich cassis flavors.

CHAMPAGNE Sparkling wine that is usually a blend of three grapes:two red: pinot noir and pinot meunier, and one white: chardonnay. Champagnes can range from very dry to sweet. Most champagne firms will make a minimum of three categories of wine: non-vintage, vintage, and pretige cuvee.

CHARDONNAY A popular white grape variety in the United States. Chardonnay has a full, round, body and buttery, apple flavors mixed with toastiness.

CHEWY This is said when a wine has a full feel in the mouth. Zinfandels are often called chewy.

COMPLEX A word use to describe a multi-layered wine that reveals different flavors as you drink it.

CRISP Used to mean that a wine tastes zesty and refreshing.

DECANT Process of slowly pouring wine from the bottle into a glass carafe, leaving the wine's sediment behind. Usually only older red wines need to be decanted.

DRY When wine tastes like it no longer has any remaining natural grape sugar.

EARTHY A descriptive term for wine when it has a smell or taste like the earth or something growing in soil. Earthy wines can be reminiscent of mushrooms.

F
FERMENTATION The process that grape juice is chemically turned into wine through the action of yeast. During fermentation, yeast enzymes convert the natural sugars in the grapes to alcohol which gives off carbon dioxide as a byproduct.

FINISH The final aftertaste of wine. Very good wines have relativley long finishes.

FLORAL A term used to describe a wine that has a smell reminiscent of flowers.

FULL BODIED Descriptive term for wine which is relatively weighty on the palate.

GAMAY A very fruity flavor similar to black cherry. This wine is often at its best served slightly chilled.

GEWURTZTRAMINER White grape variety grown mostly in cold climates. It has flavors similar to lychee nuts, peaches, apricots, and sometimes, cold cream.

H
HERBACEOUS Descriptive term for wines that have strong green herb-like flavors. Herb-like flavors are normally considered to be negative properties for most wines, however in some varieties such as sauvignon blanc they are considered to be appropriate.

MERLOT A red grape variety that is grown in most of the same places as cabernet sauvignon and is often blended with it. However merlot is thought to feel a little softer on the palate than cabernet sauvignon. Flavors of merlot that can be detected are mocha and boysenberry.

NOSE A term mostly used in Britain that is synomymous with aroma.

OAKY A term used to describe wine when it has a pronounced oak flavor that results from aging wine in new small oak barrels.

OXIDIZED Wine that has been significantly exposed to air, which changes the wine's aroma and flavor.

PINOT BLANC Pinot blanc often has flavors similar to chardonnay, though the wine is generally lighter body and somewhat more delicate.

PINOT NOIR Known for its silky texture and earthy flavors. Pinot noir grapes prefer a cold climate and is rarely found outside of the Burgundy region of France and Oregon and California in the United States.

PORT A fortified sweet wine from the Duoro Valley of Portugal. It is a blended wine made up of five grapes: Tinta Barroca, Tinta Roriz, Tinto Cao, Touriga Francesa, Touriga Nacional. Ports are divided into two categories: wood-aged ports and bottle-aged ports. The best known style of wood-aged port is Tawny Port which is ready to drink immediately after bottling. The best known style of bottle-aged port is Vintage Port which should be decanted.

R
REISLING The reknowned white grape of Germany, Austria, and the Alsace region of France. It is now becoming popular in Washington state and New York state among grape growers. Reisling grapes exhibit delicate peach and mineral flavors.

ROSE A pink wine that can be made from several different red grape varieties. Rose wines can be made many different ways, but the most common way is to draw the wine off the red grape skins before skins have completely tinted the wine red. Rose wines, like white wines, are best when they are served chilled.

S
SAUVIGNON BLANC It is the grape best known from the Sancerre region of France. It is also grown in New Zealand, Bordeaux, South Africa, California, and Washington state. Sauvignon blanc has wild, untamed flavors of grass, herbs, and green tea that are often overlaid with a smokiness.

SEDIMENT Small particles that drop out of suspension as wine ages. With considerable age, many wines throw off a sediment. Sediment is harmless.

SHERRY The famous fortified wine from the Jerez region of southern Spain. The grape variety is mainly Palomino. Sherry is made by many different styles with a variety of sweetness levels.

SOMMELIER The French term for a wine steward.

SYRAH (SHIRAZ) A wine with the unmistakble smell of white pepper and wild boysenberry flavors. Syrah is a red grape from the northern Rhone Valley of France. Syrah is also a leading grape of Australia where it is called Shiraz. California is another large grower of Syrah.

TANNIN Tannin comes from the grapes seeds and skins. It gives wine structure and acts as a natural preservative which helps wine to age. Tannin is sensed not tasted. It can be described as the fuzzy film left on one's teeth after drinking a sip of wine.

VINTAGE The year in which the grapes for a given wine were harvested. Most wines have a vintage date on the bottle, however not all do.

As it is said, all the wine listed here are dry.. you can see the full list posted by 人在天涯, for every wine, there is comments...

I would suggest you,
1. There are only 3 wines rated as 5 stars of this 100 wine list, 2 of them are for red wine...you may have both of them. I think both of them are full bodied.

2. If you want to buy more, you can have some medium-bodied or light bodied red (only one light bodied in his list, and it's a 3 stars). Full bodied may taste strong if you don't drink wine much..
