糖猪油丁3.3公斤? holy cow, why not just drink fat
:D Guess you did not get chance to try it when you were back in Leader's hometown, Gaga.:D
It is like beacon, they got fixed-in grease to fry themselves in a hot pan,or the fat will malt and run away while leave crispy but sticky rice cake with Guihua Flavour in them...two pieces for a breakfast with a small JiuNiangDan is good enough,.....yamiiiii;)

猪油年糕

猪油年糕有红玫瑰色和玉白色两种,表面敷以黄桂花和玫瑰花屑,糕中嵌着不少猪油小块,粒粒晶莹,具有糖重油多特点。一般多作热食,蒸熟后软润异常,但也可切成糕片,外涂鸡蛋浆,用油氽食。

原料配方 糯米粉5公斤 砂糖4公斤 糖猪油丁3.3公斤 黄桂花0.15公斤 玫瑰花0.15公斤 水3.5公斤

制作方法 生猪板油去膜皮,切成丁,以同量的砂糖加以腌制7~10天,即成为糖猪油。

糯米粉用开水调和成糊状(玫瑰的另加少量色素),放入蒸笼内蒸制,约40分钟。熟后取出,放在台板上,将砂糖拌揉,拌完稍微冷却,再将糖猪油丁揣入(如糕太热要冷却,以防止糖猪油丁被烫熔化)。然后将糕压成1.7~2厘米厚的薄片,在桌面上冷却。冷透后将糕卷成似茶杯粗细的条子,撒上黄桂花及玫瑰花屑。

产品贮存 猪油年糕含水量较多,又是春节前后产销的食品,容易发硬,最好贮藏在木箱里,上盖油纸。但发硬的猪油年糕,并不影响它的质量。:lookaroun

魁北克人吃油渣,不过是咸的,店里也能买到,一包一包的跟chips等在一起。
我在杭州吃的桂花糕不是油渣的,但是细软滋润,气味甜香,非常好吃。:p

en, that was 板油,油渣 is fatty meat with油,but have 渣 when the grase are melt, 板油 have no渣 if they are heated.
It is fat, white solid fat, under some part of the prok's skin, could be the chest.:p :lookaroun

Are you talking about pure lard? You can buy pure lard in any grocery store, baking goods section, brand name is TenderFlake.
