I do this for roast chicken and I think it works on turkey as well: put butter or the bird's own fat (taken from other parts) in between its skin and its flesh. You have to lift the skin from the flesh, and spread the butter/fat generously onto especially the breast. This way the breast will stay moist. Also you may add your favor seasoning to the fat mix that goes under the skin. And for best results, always marinate your bird before cooking!
